Independence Day 2025

I've been MIA for a few months... Okay, more than a few! I wanted to get on here and share a thought about Independence Day. A lot is said about the 1st and 2nd amendments of the Constitution of the United States. Usually, you'll hear something like the following, depending on your political view: "The 1st amendment gives me the right to say whatever I want!" (freedom of speech) "The 1st amendment isn't possible without the 2nd to protect it!" (right to bear arms) When looking at the Constitution, it seems that we've misunderstood what the Founding Fathers had in mind. Pizza Night

Monday is our "pizza night". It's homemade and delicious! I make 2 large pizzas to feed our family. I start by using the bread machine to make the pizza dough. There are other ways to make dough, none are difficult, but I'm used to using the bread machine. After the dough finishes, I dump it onto the counter, work it a little to get some of the air bubbles out, and divide it into two balls. Next, the balls are rolled into large "rounds" to fit the pizza pans. Yes, I use a rolling pin. Yes, I know that the understanding is that "authentic" Italian pizza is tossed, not rolled. I would ask, "Is pizza really Italian? Tomatoes come from the Americas..." Food for thought. 😉 The pizza pans are greased and ready for the crust dough. One pan has holes in it for air-flow. I find that pan has a softer crust than the pan without holes. Once the crusts are on the pans, it's time to top!...

Zebra Cake

Our 4 year old had a birthday party recently. He requested a "zebra cake". My version is different from others I've seen, so I thought I'd share it. Here are the ingredients and instructions: -3 packages Chocolate Goya Maria cookies -2 boxes Chocolate pudding mix, plus milk to make into pudding -1 1/2 tubs whipped topping -Combine pudding mixes and milk to make pudding. -In a 9x13in. pan, layer pudding, cookies, whipped topping, cookies, pudding, cookies, whipped topping, cookies, and end with pudding. -Leave in refrigerator overnight. The cookies will soak up moisture from the whipped topping and pudding, giving the cookies a cake like texture. -Before serving, top with another layer of whipped topping. -You can then decorate it just like any other cake. So the toy cars wouldn't be covered in whipped topping, I placed pieces of wax paper on the cake. I've done the wax paper thing for all types of frostings. This w...
